Black Bean Spinach Enchiladas! My Way!

Ingredients
 
For the sauce:
 
3 cups vegetable broth (i just bought 2 cans of it and used all of that)
1 small can of tomato paste
1/2 cup all purpose flour
2 Tbsp. olive oil
3 tsp. cumin
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tsp. chili powder
Salt/pepper

For filling the enchiladas:
 
1 can black beans, rinsed and drained
1 can Garbonzo beans
1  Bag frozen (thawed) corn
6 oz. fresh spinach
6 green onions, thinly sliced
2/3 cup cilantro, chopped (I like using a lot so I used more)
4 tsp. cumin
1 cups shredded cheese. I used the extra shap cheddar so I didn't need that much.. really strong flavor to begin with.
16 flour tortillas... maybe even more.

Directions:
 
To make sauce:
-- in a saucepan, heat olive oil, tomato paste, flour, cumin, garlic powder, onion powder, and chili powder.. don't let it burn! just heat it a little and then whisk in broth, bring to a boil. Reduce to simmer, and cook until slightly thickened about 8-10 minutes.. Salt/pepper to taste, I even added more cumin and garlic towards the end. Then set it aside.
 
For everything else:
 
1. In a skillet, saute the spinach in about 1/2 tbsp. of olive oil over medium/ high heat for 1-2 minutes until wilted.
 
2. In a large bowl, combine both types of beans, cheese, spinach, corn, green onions, cumin, and cilantro and pour in about 1 cup of sauce mixture into the bowl and just stir it around a bit.
 
3. Preheat oven to 375 degrees.
 
4. Lightly spray a 9x13 inch baking dish, and pour a small amount of the sauce to coat the bottom of the pan.
 
5. Fill tortillas with bowl mixture and roll up tightly with ends exposed, and place seam side down in the pan.
 
6. Pour remaining sauce over the enchiladas, coating evenly. Sprinkle additional cheese on top of the enchiladas.
 
7. Bake about 25-30 minutes. and let sit for about 5- 10 minutes on top of stove. ENJOY!

Be Still My Soul.

I turned in my mission papers! I'll know where I'm headed in about 2 weeks or so. Iwill be serving as a missionary for The Church Of Jesus Christ of Latter Day Saints. (a.k.a.- Mormon Church) Since I am a girl, I will be serving for 18 months instead of 2 years. I am so EXCITED to go. I know that the blessings that come from serving are endless. I cannot wait to see where i'm going and find those who'll need me. I love this Gospel so very much and I know that our Heavenly Father loves each one of us so much. I'm so honored to do this work in His name. (This link is to one of my favorite hymns. It really touches my heart and I absolutely explains how I am feeling right now... I also love David Archuleta's voice! Makes me so happy!)

THE GAS STATION  #2:   "Naked''

OK! so this on is at a lovely gas station in Prescott, Arizona. wonderful. So i went in this time to find something to drink to keep me awake. ( I was driving at night..) and found these fruit smoothie things called "Naked"...... So I didn't think anything of the name and brought it up to the counter and the dude asked if I found everything alright.. I said yes, I got this "Naked"..... The awkwardness escalated very quickly! This is how it all went down:
Me: Um. I mean I found this Naked...
Dude: Um.
Me: This is naked. I am buying this naked....( i'am bright red by now. this naked drink is what i am buying!! It's naked. It's called Naked.
Dude: hahaha ok. that'll be $3.46.... Enjoy that Naked. I mean enjoy your drink.
He then just kinda raised one eyebrow at me and i just walked away. mortified.
I was totes red and laughing. It was great. Nothing like making awkward circumstances even more awkward! Lesson to be learned: Stay away from Gas stations! ( Or at least don't go inside them.... You'll thank me later.)

a new beginning!

 
        Alright. Welp, welcome to my blog! a little about me: I'm a 20 yr. old ginger, freckled face girl. I am living at my parents house..still. I am a twin. I am a member of The Church Of Jesus Christ Of Latter Day Saints (aka-Mormon).. and i'm awkward. like, incredibly awkward. It's something I can't escape. Believe me, I've tried! So i've decided to embrace the awkwardness within me.... how sad is that? Anyways, I have no idea what i'm doing with this whole blogging thing. Never made one before but thought it'd be fun to put up all of my super awesome funny awkward moments. Maybe i'll make one for everyday. I've got plenty to share but we'll see what happens....






A Quick story worth telling:   The Gas Station.

       OK! so I was at Quick Trip filling up my lovely sisters car. We were on a roadtrip.. I feel like my car is way cooler.. it's a Ford Explorer. its great. My twin forgot to put the stickers on the right side of the window in the back, 3 of the doors dont open from the inside, it doesnt lock, 1 door doesnt open from the outside, the seatbelt unhooks and smacks me in the face everytime i drive, i got my finger stuck in the sunroof. twice.. but hey, i did just get the air working again so thats good. Anways, back to QT! After paying for gas inside I saw that someone was coming in and i wanted to be nice and hold the door open for them. turns out my good intentions went horrifficly wrong. instead of openng the door the "right way" I used my other hand. so weird. it's hard to explain. let me try to make sense. I used my right hand instead of my left. super awkward looking. trust me. so my right arm crossed over my body and held the door. needless to say the guy couldnt get past me, so i let go of the door, he grabbed it and during the process of puttin my arm to my side, i swung it down and up ( like a "U" shape) right into his crotch. I felt so bad. I have no idea why I did that. I didn't mean to! Worse part is- I totes laughed at him. Can you blame me? he made the funniest sound right on "impact" i just couldnt keep it in! so funny, but wrong. He was obviously in pain and i laughed at him and ran away... i literally ran outside, tripped over a few pebbles, hit my hip on someone else's car, and just walked the rest of the way to where my car was parked, sat inside looked at my sister and told her what just happened. We laughed for a good 10 mintues. Not too bad, eh? Not too awkward but awkward enough to make a good story. Hope you enjoyed it. I guess the moral of this story is to Watch your hands.
